Glossary
Carotenoids: Substance found in yellow and orange fruits and vegetables and in dark green, leafy vegetables. One type of carotenoid is converted to vitamin A in the body and may reduce the risk of developing cancer.Antioxidant: Prevents oxidation (combining with oxygen). Anti- oxidant substances include superoxide dismutase, selenium, vitamin C and E, and zinc.
