Effect on nutritive values
Just like in home cooking heat labile nutrients are lost when heated and water soluble components are lost when washed with water: so is the case in processed foods. The difference lies in the fact that, in most cases, these foods are later fortified and enriched with the desired nutrients which makes it better.
