To cool off this summer, it's very refreshing to have a colorful serving of raw vegetable salad. Cucumber has a very cooling effect. The pulp or the cucumber juice when applied on the face has a cooling effect. It also helps to reduce the oiliness and impart a cool and a fresh feeling. Warm sunny days call for light and refreshing meals!! Sliced tomatoes, cucumber, carrot, radish and onions garnished with lime will pep up your mood and keep your spirits high. Here's a wonderful cooling recipe:
Yogurt Cucumber Dip (yields 1/2 cup)
Ingredients:
- Peeled, shredded cucumber,drained - 1/2 cup
- Minced green onion - 1 tablespoon
- Plain skimmed yoghurt - 1/2 cup
- Black pepper - 1 dash
- Garlic and clove minced - 1 teaspoon
- Finely chopped celery - 2 tablespoons
- Salt - 1/ 4 teaspoon
Directions:
Combine all ingredients and carefully blend. Chill 1 to 2 hours. Serve with crisp raw vegetables.
Yield: 3/4 cup Serving
