Kalonji seed recipes have been part of the Indian cuisine for a long time. It can be used in pulao, chutney, podi, breads, curries, and more.
Kalonji chutney
Ingredients
- Kalonji seeds- 5 tbsp
- Red chillies, dried- 5 nos
- Onion- 2
- Garlic- 2 cloves
- Mustard oil- 2 tbsp
- Turmeric, grated- ¼ tsp
- Coriander leaves- 2 tbsp
- Salt- to taste
Instructions
- Dry roast the seeds in a heavy-bottomed pan on low flame. When it starts spluttering, add red chilies and roast.
- Set it aside to cool and powder it.
- In a pan, add oil, turmeric chopped garlic, and onions, and cook until golden brown.
- Add salt, and coriander leaves and mix well.
- Set it aside to cool and grind to a smooth paste.
- Add the powdered seeds to the paste and add a few drops of oil to enrich the flavor and serve.
Kalonji Podi
Ingredients
- Kalonji seeds- ½ cup
- Sesame seeds- ¼ cup
- Jeera- ¾ cup
- Ajwain- ¾ cup
- Coconut, grated- ¼ cup
- Garlic- 5 cloves
- Red chilli powder- 2 tsp
Instructions
- In a pan, roast the sesame seeds, jeera, ajwain, and coconut, and set aside to cool.
- To a blender add the roasted ingredients, kalonji seeds, garlic, chilli powder, and garlic, and blend to a coarse mixture.
