What Sets Green Tea Apart from Other Tea?

What sets green tea apart is the way it is processed.

Green tea is the least processed variant. The tea leaves are steamed, roasted, or pan-fried almost immediately after plucking, leaving little chance for them to ferment. This prevents the epigallocatechin gallate (EGCG) from being oxidized. Since it skips the oxidizing step, green tea has a more delicate taste and is light green or golden in color retaining the natural bitterness and astringency.

Why Green Tea is Better?

The caffeine content of green tea is higher than black tea. It is also inferior to black tea in terms of aroma and flavor. The reason is the inactivation of enzymes during the steaming process.

On the other hand, black and oolong tea leaves are made from fermented leaves, which results in the EGCG being converted into other compounds that are not nearly as effective in preventing and fighting various diseases.(2 Trusted Source
